Roasted Eggplant Hummus

If you are following me on Facebook, you’ll notice my Thursday night routine often includes a variation a hummus theme.  When I was asked to share a recipe with My Imperfect kitchen, I thought that this would be a great place to share my babaganush-hummus combo, roasted eggplant hummus.  I won’t spoil the surprise here, but if you’ve seen any of my other approached to hummus, I am sure you’ll know what to expect!
